Wednesday Stir-Fry

So whilst my family and another family were on vacation in Orlando we had a lot of time to talk when we were standing in those gosh-forsaken lines to get onto all the rides. For some reason when we were standing in line for the Mummy we wound up simple recipes for the college student living in an apartment.

Automatically when I heard the word stir-fry I was pulled in. Throughout the whole conversation I was taking mental notes. I wound up cooking this delicious stir-fry which was completely easy to make which was fine by me. When it is hot outside I really do not like taking a lot of time on hot food because then the house just seems to fill up with the heat. Gross.

The recipe was as basic as basic can be:
1 box of spaghetti (whole wheat or regular, I only had regular)
1 bag of frozen stir-fry veggies (I got mine from Aldi)
Asian Sesame Salad Dressing by Kraft
*You can add meat if you like, I just had mine with the veggies and pasta

Cook the pasta as you normally would and then drain it. Cook the vegetables as stated on the package (I omitted the soy sauce because I think it makes it too salty). Add the Asian Sesame dressing once the vegetables have cooked. Don't add too much of it at a time, I recommend adding a little as you go and tasting it along the way. Add the noodles into the skillet and toss the vegetables with the noodles. Serve warm.
So with that delicious dish in my belly I really didn't think today could get any better but...my lovely neighbor brought over some vegetables from her garden. So you can probably guess what is going to happen to these. *insert evil cackle here* Ha, sorry couldn't help it.

Tomatoes, jalapeƱos, onions oh my!

Well I am off to go make my first batch of overnight oats! Wish me luck:)

Goodnight. See you all in the morning!

  1. OO's are pretty fantastic (though I prefer hot still). Last night oats for me, were just under 1/2 cup old-fashioned oats, 1/2 cup water, 1 tbsp raisins, and 1 tbsp Trader Joes pumpkin butter...oh and a dash of cinnamon ;) Delish!
